Little Lemon Lovelies


I was having a bit of a boring Monday so I was like, let’s bake something (no change there). I was browsing Poppy Deyes’ blog (as per) and saw these zesty lemon biscuits which she posted the day before! I RARELY make any proper biscuits so I thought why not give them a go! PLUS I did them gluten free and they didn’t fall apart!!!!!!!!!! How amazing!!!

Now, because I didn’t want to make too many in case they flopped, I halved the quantities the recipe said to do.

SO for the biscuits:

  • 112g butter
  • 112g icing sugar
  • 1tbsp lemon juice (fresh is better)
  • Little pinch of salt
  • 175g plain flour (gluten free if you want)
  • 1tsp xantham gum (for gluten free)

For the icing:

  • 112g icing sugar
  • 3/4 tbsp lemon juice (fresh is better)
  • 1/4 tbsp milk
  • Lemon zest (if ya wanna make it pretty and lemony)


What ya gonna wanna do first is preheat the oven to 180 degrees. THEN mix together the butter, sugar and lemon juice until its all combined then add a bit of salt and mix again! Next add in the flour and xantham gum and mix it to the max. When it starts to form into ‘clumps’, you can give it a little helping hand and squeeze it all together to form a ball. (If it is too dry just add some milk).

Take it out of the bowl onto a floured surface and role out til it’s about the thickness of a pound coin ish and get out your cookie cutter and form your biscuits! Once cut, transfer them onto a lined baking tray…but be careful they don’t crumble/break (very common for gluten free!!). Once the baking tray is full (you can put them close together as they don’t change shape), put them in the oven for about 10 minutes, they won’t brown so don’t fall for the ‘undercooked’ look!! After the time is up, take them out and leave them on the baking tray for a few minutes to harden up a bit, then move them onto a cooling rack.

Once they are fully cooled, you can get onto the icing! Mix everything together other than the zest, until you get a good consistency, no lumps and it tastes as lemony as you want it to! Let it set until its a bit sticky then sprinkle/grate some lemon zest on top..and then they look very pretty!!


Then hey ho you have some deeeeelish biscuits to nibble on throughout the day and evening….and night…. I am 100% making these again (and doubling the quantity) because they are super yummy and simple to make!!!
