soooo… CRAZY post I know….. who would’ve though sweet potato brownies could be a thing?! BUT they are and they are one of the weirdest things I could bake tbh. (theytastedelishbtw)!!!
I got this recipe from Deliciously Ella (linked), but changed it ever so slightly to fit what I could find in the cupboards and didn’t have to buy any crazy stuff!
The ingredients ya gonna want are:
For the brownies:
– 2 medium to large sweet potatoes (600g)
– 2/3 of a cup of ground almonds (80g)
– 1/2 a cup of buckwheat or brown rice flour (100g)
– 4 tablespoons of raw cacao
– 3 tablespoons of pure golden or maple syrup
– a pinch of salt
For the OPTIONAL icing:
– 5 tablespoons of icing sugar
-2 tablespoons of coco powder
-40g butter
-1 tablespoon milk
Ok, so first, preheat your oven to 180 degrees (as per) and then peel both of the sweet potatoes (stuff the gym, this is your workout)! It literally took me 2 gossip girl episodes to do this!! Chop them into chunks and either put them in a steamer for 20 minutes or put them in the microwave for 10 minutes each/20 mins. When you take them out, make sure they are soft and then you can either put them in a food processor or mash them together.
Put all the other ingredients in a bowl and mix and then add the sweet potato and mix it aaaallllll together until smooth(ish).
Once stirred well, pop it all into a baking tray and put it in the oven for about 20 minutes. Once out, pierce it with a fork/knife/skewer to make sure no uncooked bits come out. Allow it to cool for about 5 minutes, then put the icing on top to make it unhealthy!!!
Cut them into little squares and enjoy!!!
ps. even though they don’t look brill on the inside, TRUST ME they taste goooooood
