I am so so glad I have knowledge of baking otherwise I wouldn’t be able to fulfil my cravings!! I once again had a craving for banana bread PLUS I wanted to try out my new tin I got a couple of weeks ago because its sooooo cute, AND I also wanted a nice lil marble slab/tile thing to make my pics look a bit nicer, so me n dad went on a hunt and found a perfect tile in the waste of a tile company! Anyway I managed to get round to doing it and made it gluten free due to dietary requirements within the Goodall household. I had to pop to the shop for some bananas and chocolate (the main ingredients-would be a mare if I didn’t drive) and managed to find full on, gluten free chocolate chips which was basically ‘everything-free’ but they taste so good (moo free baking drops for those wondering).
The ingredients I used were:
- 1 ripe banana (peeled weight 100g/4oz)
- 1 tbsp milk
- 50g/2oz soft butter or baking spread
- 75g/3oz gluten free plain flour
- 5g xanthan gum (to make it taste less ‘grainy’ due to gf)
- 75g/3oz caster sugar
- ½ tsp bicarbonate of soda
- ½ tsp baking powder
- 1 free-range egg
- 50g/2oz chocolate chips
Literally all you have to do is peel n mash the banana and put everything apart from the choccy into the bowl and give it a good mix and when it’s smooth, fold in the chocolate chips and then put it into a lined/greased baking tin and put it in the oven at 160 degrees for 40/45 minutes. Once again, you know it’s done when all that comes out on on skewer/fork/knife is melted chocolate (heart eyes)!!! Let it cool and then when you are ready, cut yourself a bit and try it.. you WILL NOT be let down!
(Make sure your dog is out of the house when doing the pics… the greedy thing)
